The C word... again
Jul. 8th, 2009 12:21 pmMmmmmmmmm and Oooohhhhh. I've been reading the sequel to Joanne Harris's 'Chocolat' and it is so damned evocative! I now feel seriously inspired to have a truffle-making weekend.
For years I've stuck with a favoured recipe that makes wonderful, simple, alcoholic truffles. (I shared it here some time ago, for the good of mankind... http://the-meanest-cat.livejournal.com/13844.html)
But now I feel like branching out a little... I want to try some more sophisticated flavours and techniques. Subtle touches of chilli, nutmeg, cinnamon, herbs and essential oils. And even branch out more with the simple truffle flavours, like using Fra Angelico or bison vodka. And for yonks I have been meaning to make some mint thins, the ones with tiny fragments of cripsy mint pieces in them. Hell, I might even get my never-used chocolate moulds out and see if I can make some properly tempered, glossy 'shells' for my fillings.
If anyone has the faintest idea how to make salted caramels... tell me now!
And furthermore, if any of you lovely fiends fancy getting together sometime for a day of artisan chocolaterie, then let me know! (It is like teaching a man to fish - once you know how to make them, you will never want for good truffles ever again)
